Summary:
This recruitment will be used to fill one full-time Baker position for University Housing & Dining Services at
Oregon State University (OSU).
University Housing & Dining Services (UHDS) recognizes the importance of learning both in

students, faculty, staff, and guests with safe, economical, convenient, and comfortable living and dining options, and the department works
to maintain the highest educational and service standards. UHDS houses over 4,800 students and offers a variety of living and dining options
in 15 residence halls, three dining centers, 10-14 retail and coffee shop locations across campus, a market, and a limited number of family
apartments. UHDS is an auxiliary enterprise which is funded solely by customers who use our services – we receive no State of General fund
allocation.

This position is eligible for meal
perquisites per the SEIU contract.
This position will adhere to all OSU and UHDS policies and procedures.
The purpose of this
position is to prepare baked goods according to the menu for UHDS Dining Services and University Catering. This includes record keeping,
assisting other staff members in the work unit as needed, training other staff members, and the sanitation and cleaning of the work
unit.

Key Responsibilities
75% Baking:
Gathers materials and
prepares baked goods according to standardized recipes described on production work schedule; weighs, measures, mixes, kneads, molds, and
brings the dough to proper lightness; bakes specialty breads, rolls, buns, biscuits, bars, cookies, pastries, cakes and pies; measures and
mixes the batter for cakes, cheesecakes, custards, puff pastries, cookies, pies, and other desserts; performs finish work on pastries by
glazing rolls and donuts, icing and decorating cakes and cookies, and fluting pie shells; counts and prepares baked goods for distribution
to food service units; uses bakery equipment such as a variety of ovens and proofers, mixers, choppers, steam-jacket kettles, and pastry
cutters; adjusts scale of recipes for larger or smaller quantities and makes recipe changes when necessary to obtain a better quality
product.
Produces specialty baked goods according to direction of chefs.
Performs some baking in display cooking environment.
Works with Culinary Management (Chef & Sous Chef) to ensure all guests needs are met.
5% Record Keeping, Recipes,
Cleaning:
Actively participates in menu meetings to establish quantities of foods to order, recipe evaluation, and to encourage
open on-going communication between management and other staff members.
Records daily production numbers to help in forecasting.
Participates in requisitioning and record keeping. Maintains adequate products and supplies for baking operations; requests, through the
supervisor, bakery products which need to be ordered; checks food products received to assure they meet the type, quantity, and quality
specified on order.
Assists the supervisor by keeping records of bakery ingredients used, production volume, distribution, and sales of
baked goods; assists the supervisor in maintaining production volume and distribution schedules as well as a production schedule determined
by orders from the units; records and communicates changes when recipes are altered.
Assists in monthly food inventory counting; counts
equipment such as kitchen utensils for inventory as needed.
Participates with the supervisor in selection and development of recipes and
production methods for baked goods. All new recipes are turned in to the Chef or General Manager for entry into the Menu Management System
to assess cost effectiveness before being produced.
Places leftovers in proper containers for storage; washes and cleans utensils and
equipment used in the bakery shop; washes and scrubs pots and pans; cleans sinks, ovens, counter tops, tables, coolers, walls, and
floors.
15% Leadership:
Train, assign, and monitor work of students and/or food service staff and workers in
baking methods and procedures as instructed by supervisor; may train, plan and direct the work of student or other employees.
The
leadership role is inherent in this position. There is a need to consistently demonstrate sound judgement to support the established
professional standards, policies and procedures of the work unit, department, and university.
5% Miscellaneous:
Use a computer to check work schedule, complete time sheets, complete online forms, and check employer provided email.
Other duties as
assigned which could include, but is not limited to, cooking and cash handling/POS operation.
