General Summary
Effectively manages the production operations and facilities needs of the Culinary Arts & Foodservice Program. The facilities comprise approximately 13,000 square feet of state-of-the-art new construction, including the two teaching kitchens, service kitchens, baking kitchen, commissary, fine dining restaurant, and Grab ‘n GOurmet bistro. Production functions include daily breakfast and lunch offerings at the Grab ‘n GOurmet bistro, weekly lunch offerings in the fine dining restaurant, coordinated evening dinners in the fine dining restaurant in conjunction with the department and foundation/development office, and other special events. The nation’s most prestigious recognition of Community College Excellence, the Aspen Institute’s Aspen Prize, awarded Odessa College its Rising Star Award in 2017, which ranked Odessa College among the top five in the nation for improving and advancing student achievement out of 1100 eligible institutions.
Specific Position Duties
1.Assists the Director in establishing and maintaining a production environment dedicated to extraordinary customer service in the Grab ‘n GOurmet bistro, fine dining restaurant, and at special events; 2.Oversees the daily compliance with health, sanitation, and safety requirements of the educational and production components of the program; 3.Develops menus for the Grab ‘n GOurmet bistro, restaurant functions, and catering events in collaboration with the program Director and faculty; 4.Coordinates an events schedule under the direction of the program Director and in collaboration with the College Development Office; 5.Establishes an intern and part-time staffing schedule with the program Director and faculty while balancing the integrity of the curriculum with the requests for events, availability of foods and goods, and availability of student coverage; 6.Supervises part-time staff and interns in the Grab ‘n GOurmet bistro, fine dining restaurant during hours of operation, and at special events; 7.Manages the procurement and distribution of foods and goods required for the educational and production components of the program; 8.Develops and maintains a foods and goods inventory system for use by the Director and Manager in making procurement decisions, including data on cost management, usage, and efficiency; 9.Develops and maintains a system of accounting that incorporates the POS system, college purchasing procedures, and departmental budgeting with the aim of maximizing quality, efficiency, and revenue; 10.Evaluates and maintains program equipment and facilities, including collaborating with college physical plant personnel, managing vendor relationships, and monitoring equipment warranties and leases; 11.Actively participates in college functions and events, and engages in community service; and, 12.Teaches and mentors interns in the Grab ‘n GOurmet bistro to facilitate the growth of student culinary and service skills. 13.Performs other duties as assigned.
Minimum Qualifications
Associates Degree in Culinary Arts or related field. Demonstrated successful and effective experience in restaurants or food service.
